Pupitre
Rack with holes: In the old days these racks were used to remove the deposits from the champagne. Each bottle was placed in a whole, turned a little bit and lifted a little bit each day until all yeast was collected at the neck of the bottle, standing allmost upright. The cork would then be disgorged, the pressure in the bottle shoot out the yeast and the champagne closed again with the final cork. Now the racks are mainly used as decoration.
